 2 cups uncooked instant brown rice
 Water2 1 /4 Cup (16 tbs)
 Cornstarch1 Tablespoon
 MARINADE1 /4 Cup (16 tbs)
 Water1 /2 Cup (16 tbs)
 Ground ginger1/2 Teaspoon
 Canola oil3 Teaspoon
 3/4 lb boneless pork loin, trimmed of fat, cut into thin 2-inch strips
 Broccoli florets2 Cup (16 tbs)
 1 small onion, cut into thin wedges
 Mushrooms package1 , sliced
 1 medium red, yellow or orange bell pepper, cut into 1-inch pieces
 Garlic2 Clove (5gm), finely chopped

Directions

GETTING READY
1 Cook rice with 2 1/4 cups of water as directed on the package,without butter and salt.
2 In a small bowl put cornstarch and gradually stir in teriyaki marinade with 1/2 cup of water and ginger.

MAKING
3 In a 12-inch nonstick skillet or wo,heat 2 teaspoons of oil over medium-high heat.Add pork and stir fry for 4 to 5 minutes.Remove from the skillet and keep warm.
4 Add the remaining oil to the skillet and put broccoli,onion,mushrooms,bell pepper and garlic.Stir fry for 4-5 minutes or until vegetables are crisp-tender.
5 Stir the cornstarch mixture into broccoli and add pork.Cook and stir until the sauce is thick.

SERVING
6 Serve over rice.
