Peppers - 2 1/4 lb
Extra virgin olive oil - 6 tbsp
Garlic - 4 cloves, peeled
Fresh or dried chili pepper - 1
Wine vinegar - 1/2 cup
Fine breadcrumbs - 1/2 cup
Capers - 2-3 tbsp
Oregano
Salt
Directions
GETTING READY
1 Remove the stalks, seeds, and white inner membrane from the peppers.
2 Cut them into fairly thin strips.
MAKING
3 In a very large skillet, heat the oil.
4 Stir fry the garlic, chili pepper, and pepper strips for 2-3 minutes over high heat.
5 Reduce the heat and sprinkle with about one third of the vinegar and 3 tbsp of the breadcrumbs.
6 Add a pinch of salt.
7 Gradually add in the remaining vinegar and breadcrumbs, stirring constantly.
8 Stir in the capers.
9 Cover and cook over low heat for about 15 minutes, or until the peppers are tender, adding a little water when necessary.
10 Add a little more salt if needed and a pinch of oregano.
11 Stir once more and remove from the heat.
SERVING
12 Serve it as it is or as a delicious stuffing for vegetables and poultry.
