Stir Fried Orange Beef Recipe

Ingredients

 
2 Florida oranges
 
1 1/4 pounds top round steak, trimmed
 
1/2 cup Florida orange juice, divided
 
2 tablespoons low sodium soy sauce
 
1 tablespoon plus 1 teaspoon cornstarch, divided
 
2 teaspoons brown sugar, divided
 
1/2 cup low sodium chicken broth
 
1 tablespoon Oriental sesame oil
 
1 teaspoon finely minced ginger root
 
1 clove garlic, minced
 
4 cups broccoli flowerets
 
4 medium scallions, cut into 2 inch pieces
 
1 can (8 ounces) sliced water chestnuts, rinsed and drained
 
3 tablespoons chopped cilantro

Directions

Remove thin strips of rind from oranges with paring knife or zester; set aside.
Section peeled orange; set aside.
Cut steak along grain into 2-inch-wide strips.
Cut steak across grain into 1/4 inch-thick slices.Combine steak, 2 tablespoons orange juice, soy sauce, 1 tablespoon cornstarch and 1 teaspoon brown sugar; stir to combine.
Set aside.
Combine chicken broth, remaining 6 tablespoons orange juice, 1 teaspoon cornstarch and 1 teaspoon brown sugar in small bowl until well blended.
Heat oil in large nonstick skillet over medium-high heat until hot, but not smoking.
Add reserved steak; stir-fry 3 to 4 minutes until steak is browned.
Remove from skillet.
Add ginger, garlic, reserved orange rind, broccoli, scallions, water chestnuts and chicken broth mixture.
Stir-fry 2 to 3 minutes until vegetables begin to soften.
Add cilantro and reserved steak (with juices); cook and stir until sauce has thickened slighdy.
Stir in orange sections and serve immediately.
