Ingredients

 Chinese mushrooms50 Gram, dried
 Oil1 Tablespoon
 Root ginger1 Teaspoon, finely chopped
 Spring onions2
 Garlic1 Clove (5gm)
 Button mushrooms250 Gram
 Straw mushrooms – 1 can (250 g or 8 oz), drained
 Chilli bean sauce or chilli powder - 1 teaspoon
 Dry sherry2 Teaspoon
 Dark soy sauce2 Teaspoon
 Chicken stock1 Tablespoon
 Sugar – a pinch
 Salt – a pinch
 Sesame oil1 Teaspoon
 Coriander leaves - to garnish

Directions

GETTING READY
1) In a bowl, place the dried mushrooms and cover with warm water to soak for 15 minutes.
2) Drain the mushroom and squeeze water to dry. Discard the hard stalks.

MAKING
3) In a wok, add oil to heat up.
4) Add ginger, spring onions and garlic to stir-fry for 5 seconds.
5) Add dried and button mushrooms to stir in. Stir fry for 5 minutes.
6) Put the remaining ingredients in the wok.
7) Thoroughly mix all together to coat all mushrooms with sauce.
8) Stir-fry for 5 more minutes to cook the mushrooms until tender.

SERVING
9) Use a warm serving dish, to transfer the mushroom mixture. Sprinkle with coriander leaves and serve at once with rice.
