Ingredients
| Lean Lamb Steaks OR Fillet OR Boned Loin Chop Meat - 12 ounce 350grams, cut into thin slices | ||
| Dry Sherry OR Rice Wine - 2 teaspoons | ||
| Dark soy sauce | 2 Teaspoon | |
| Light soy sauce | 2 Teaspoon | |
| Sesame oil | 1/2 Teaspoon | |
| Oil | 2 Teaspoon | |
| Spring onions | 1 1/2 Teaspoon, finely chopped | |
| Garlic | 3 Clove (5gm) | |
| Ginger | 1/2 Teaspoon, finely chopped | |
Directions
GETTING READY
1. In a bowl put the meat, pour the sherry or rice wine, soy sauces and sesame oil, mix and let the meat marinade for 20 minutes.
2. Drain off the marinade liquid and keep the meat aside.
MAKING
3. In a wok or large frying-pan heat the oil, add the lamb pieces with a little marinade and stir-fry for 2 minutes.
4. To this add the spring onions, garlic and ginger, and continue to stir-fry for another 4 minutes.
SERVING
5. Serve hot with steamed rice.
