Fish Steak - 1 pound (cod, halibut, Tilapia - any whitefish)
 
Salt - 1/2 teaspoon
 
Red Cooking Wine OR Sherry - 2 tablespoons
 
Cornstarch - 4 tablespoons
 
Egg White - 1, lightly beaten
 
Sunflower OR Safflower Oil - 3 tablespoons
 
Fresh Root Ginger - 1 slice, peeled, finely chopped
 
Light Soy Sauce - 2 tablespoons
 
Sugar - 2 teaspoons
 
Chicken Broth OR Water - 1/2 cup
 
Green Onion - to garnish

Directions

MAKING
1. Cut the fish steak into pieces about the size of a matchbox.
2. Mix together the salt, wine, and 1 tbsp or cornstarch and marinate the fish in this mixture for about 30 minutes.
3. Dip the fish pieces in egg white, then in the remaining cornstarch.
4. Heat the oil in a wok or skillet until hot and then stir-fry the fish pieces until golden, stirring them gently to separate each piece.
5. Add the ginger, soy sauce, sugar, and water.
6. Cook for 3-4 minutes, or until the liquid had completely evaporated.

SERVING
7. Serve hot, garnished with green onion.
