 Bitter gourd1 Medium
 Salt2 Tablespoon
 Vegetable oil1 Tablespoon
 3 tablespoons small dried prawns
 6 red or golden shallots, sliced
 Garlic2 Clove (5gm), sliced
 Finely sliced2 , finely grated
 Green chillies3 , sliced
 1 small red pawpaw, cut into 3 cm/1 1/4 in cubes
 Mange-tout125 Gram, halved
 Tamarind concentrate1 Tablespoon

Directions

1. Rub each slice of bitter melon (gourd) with salt, place in a colander and set aside for 30 minutes. Rinse under cold water and drain thoroughly.
2. Heat oil in a wok over a medium heat, add dried prawns, shallots, garlic and lemon grass or rind and stir-fry for 4 minutes or until shallots are golden.
3. Add chillies and bitter melon (gourd) and stir-fry for 4 minutes or until melon is tender. Add pawpaw, snow peas (mangetout) and tamarind and stir-fry for 2 minutes or until snow peas (mangetout) are tender.
