| Bitter gourd | 1 Medium | |
| Salt | 2 Tablespoon | |
| Vegetable oil | 1 Tablespoon | |
| 3 tablespoons small dried prawns | ||
| 6 red or golden shallots, sliced | ||
| Garlic | 2 Clove (5gm), sliced | |
| Finely sliced | 2 , finely grated | |
| Green chillies | 3 , sliced | |
| 1 small red pawpaw, cut into 3 cm/1 1/4 in cubes | ||
| Mange-tout | 125 Gram, halved | |
| Tamarind concentrate | 1 Tablespoon | |
Directions
1. Rub each slice of bitter melon (gourd) with salt, place in a colander and set aside for 30 minutes. Rinse under cold water and drain thoroughly.
2. Heat oil in a wok over a medium heat, add dried prawns, shallots, garlic and lemon grass or rind and stir-fry for 4 minutes or until shallots are golden.
3. Add chillies and bitter melon (gourd) and stir-fry for 4 minutes or until melon is tender. Add pawpaw, snow peas (mangetout) and tamarind and stir-fry for 2 minutes or until snow peas (mangetout) are tender.
