Deer Meat Stifado Recipe
Do you want a fabulous stifatho recipe? It is a greek kitchen invention. You can serve stifatho as a yummy main dish. Just try it once, and you'll no doubt want to prepare this for your friends again.
Ingredients
2 pounds deer meat
2 teaspoons salt
7 teaspoons vinegar
2 bay leaves
Pinch of rosemary
12 whole allspice
1/3 cup olive oil
1/2 teaspoon cumin
6 cloves garlic
1/2 teaspoon pepper
1/2 can tomato paste
24 medium onions
Directions
Soak meat in cold water overnight with 1 teaspoon salt and 1 teaspoon vinegar.
Next day wash well, cut into medium-sized pieces and boil 5 minutes.
Empty water.
Put 2 cups fresh water in pot.
Add a garni of bay leaves, rosemary and allspice.
Next add olive oil, cumin, garlic, pepper, remaining salt and vinegar and tomato paste.
Boil in covered pan over medium heat until meat is half-cooked.
Add onions and finish cooking.
Add more water if needed, but there should be little water left when the stew is completed.
Remove spice garni
