Sticky Rice With Shrimps Recipe

Ingredients

 
5 oz. pudding (round) rice
 
2 oz. dried shrimps
 
2 oz. lean roast pork
 
1 spring onion
 
1 dessertspoon pork dripping
 
Pinch each sugar and Ve-Tsin
 
1/2 teaspoon ginger sherry

Directions

Soak the rice overnight.
Soak the shrimps for 3 minutes and steam them for 3 minutes.
Drain the rice and tie it loosely in a piece of butter muslin (cheese cloth) or mutton cloth (closely knitted cotton obtainable from the haberdashery departments of most stores).
Steam it for 30 minutes.
Remove.
With the finger tips sprinkle generously with cold water and return to the steamer for a further 30 minutes.
Meanwhile dice the pork and finely chop the onion.
Gently cook the onion in the pork dripping for 1 minute.
Add the pork, seasonings and ginger sherry and cook for 1/2 minute, stirring all the time.
Remove the rice from its bag.
Turn it into a heated dish and add the shrimp and pork mixture.
