Stewed Tripe with Vegetables Recipe
Ingredients
| Tripe | 1 pound | |
| Water | 2 Cup (16 tbs) | |
| Tomatoes | 2 Cup (16 tbs) | |
| Bay leaf | 1 | |
| Whole Cloves | 2 | |
| Peppercorns | 4 To taste | |
| Green pepper | 1/2 , chopped | |
| Onion | 1 , chopped | |
| Salt | 1 1/2 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| Worcestershire | 1/2 Teaspoon | |
| Potatoes | 4 Medium | |
| All-purpose flour | ||
| Green beans | 2 Cup (16 tbs), drained | |
Directions
Cut tripe into 1-inch squares.
Add water and all ingredients except last 3.
Simmer, covered, for 2 hours.
Add potatoes and simmer for 1 hour longer.
Thicken with flour mixed with a little cold water.
Add beans, and heat.
Makes 4 servings.
