Ingredients

 Tripe1 pound
 Water2 Cup (16 tbs)
 Tomatoes2 Cup (16 tbs)
 Bay leaf1
 Whole Cloves2
 Peppercorns4 To taste
 Green pepper1/2 , chopped
 Onion1 , chopped
 Salt1 1/2 Teaspoon
 Pepper1/8 Teaspoon
 Worcestershire1/2 Teaspoon
 Potatoes4 Medium
 All-purpose flour
 Green beans2 Cup (16 tbs), drained

Directions

Cut tripe into 1-inch squares.
Add water and all ingredients except last 3.
Simmer, covered, for 2 hours.
Add potatoes and simmer for 1 hour longer.
Thicken with flour mixed with a little cold water.
Add beans, and heat.
Makes 4 servings.
