 3 cups frozen cut okra
 Vegetable oil1 Teaspoon
 Green bell pepper1/2 Cup (16 tbs), chopped
 Onion1/4 Cup (16 tbs), chopped

 Pepper1/4 Teaspoon
 Whole tomatoes1 Can (10oz), drained
 Coarsely ground pepper (optional)

Directions

1. Combine 4 cups water and okra in a medium saucepan; bring to a boil. Reduce heat, and simmer, uncovered, 3 minutes. Drain; set aside.
2. Heat oil in saucepan over medium heat. Add bell pepper and onion; saute 3 minutes or until tender. Add okra, salt, pepper, and tomatoes; cook until thoroughly heated. Sprinkle with coarsely ground pepper, if desired.
