| 4 large ripe tomatoes, peeled, cored, and quartered, or 1 1/2 pounds Italian plum tomatoes, peeled | ||

Directions
MAKING
1. In a saucepan combine tomatoes with the other ingredients.
2. Add a little water if tomatoes are very firm
3. Cover pan and place on a medium low flame
4. Simmer the tomatoes for 5 to 7 minutes until tender but not mushy.
5. Uncover and simmer 1/2 minute longer until moisture evaporates
SERVING
6. Serve in small bowls as a side dish
