Stewed Potatoes With Tomatoes And Feta Recipe

 Olive oil1 1⁄2 Tablespoon
 Spanish onion1 Cup (16 tbs), chopped
 Garlic2 Clove (10 gm), peeled and minced
 Tomato sauce1 Cup (16 tbs)
 Water1 Cup (16 tbs)
 Chopped parsley2 Tablespoon
 Ground pepper To Taste
 Potatoes4 Medium, peeled and cut into 6 wedges
 Feta slices4
 Salt To Taste


1. In a 10-inch deep-sided skillet, heat the oil and saute the onion over moderate heat until soft and golden. Add the garlic, tomato sauce, water, parsley, and salt and pepper.
2. Bring to a boil, add the potatoes, cover tighdy, lower the heat, and cook 30 minutes, or until the potatoes are tender and the sauce is thickened.
