Ingredients

 4 conchs
 Onions2 , chopped
 Garlic3 Clove (5gm), minced
 Olive oil1/3 Cup (16 tbs)
 Dried basil1 Teaspoon
 Salt1 Teaspoon
 Tomato puree2 Cup (16 tbs)
 Red wine1 Cup (16 tbs)

Directions

Tenderize the conchs.
Cook onion and garlic in olive oil until golden.
Add basil, salt, puree, and wine.
Bring to boil and simmer for 30 minutes.
Add conchs and cook just until heated through and tender.
Add a little more wine if sauce becomes too thick.
Season to taste, and serve on rice or spaghetti.

i have to disagree with the name of this recipe. this is NOT how BAHAMIANS make what we call stew (not stewed) conch. i have no doubt that it is a delicious and tantalizing recipe but it is not the traditional stew conch that Bahamians make.
