Ingredients

 4 to 5 lbs. stewing chicken, cut-up
 Water4 Cup (16 tbs)
 Onion1 Medium, sliced
 Stalk celery1 Medium, chopped
 2 or 3 peppercorns, if desired

Directions

In large saucepan, combine all ingredients.
Cover and simmer 2 to 3 hours until tender.
Remove chicken; strain broth.
Cool chicken slightly; skim off all fat.
Remove skin and bones; cut into pieces.
Cover and refrigerate.
Use within two days or wrap tightly and freeze.
