Stewed Chicken Recipe

Ingredients
1 5- to 6-pound stewing chicken, cut up, or 2 3-pound broiler-fryer chickens, cut up
4 stalks celery with leaves, cut up
1 carrot, sliced
1 small onion, cut up
2 sprigs parsley
1 bay leaf
2 teaspoons salt
1/4 teaspoon pepper
Directions
Place chicken in a large kettle; add enough water to cover (about 8 cups).
Add celery, carrot, onion, parsley, bay leaf, salt, and pepper.
Cover; bring to boiling.
Simmer till chicken is tender, about 1 hour for broiler-fryers or 2 to 2 1/2 hours for stewing chicken.
Remove chicken; strain broth.
When chicken is cool enough to handle, cut meat from bones; discard skin and bones.
Store meat and broth separately in covered containers; chill.
