Stewed Beef Recipe
Ingredients
1 1/2-2 pounds beef (rump, shoulder, etc.) cut into 4 pieces
1 teaspoon salt
Freshly ground black pepper
3 tablespoons bacon fat or oil
1 large onion, sliced
1 bay leaf
2 cloves
6 peppercorns, crushed
1 tablespoon vinegar
1 tablespoon prepared (Dijon type) mustard
Water
Directions
Rub the beef on all sides with salt and pepper.
Heat the bacon fat in a heavy casserole and brown the beef quickly on all sides over high heat.
Add and saute the onion during the last few minutes of browning the beef.
Add the remaining ingredients, using only enough water to barely cover the beef.
Bring to a boil, reduce the heat and cover the pan.
Simmer slowly for 2 to 3 hours, turning the meat every 30 minutes.
The meat should be very tender.
