Ingredients

 
1/2 cup steel-cut oats
 
1/4 cup each minced onion and celery
 
2 tablespoons rendered chicken fat and/or butter
 
3 cups brown chicken stock
 
2 medium beets, cooked and cut in julienne
 
Salt and black pepper to taste
 
Minced fresh parsley and/or chives

Directions

Brown oats, onion and celery in chicken fat.
Add stock, bring to gentle boil, cover, lower heat and simmer 20 minutes, or until oats are tender but still crunchy.
Add beets, reheat and season with salt and pepper.
Garnish with parsley.
