Ingredients

 
3 heaped tblspns, sago
 
1 tblspns, golden syrup
 
1 tspn, cream of tartar
 
1/2-tspn. baking powder
 
2 cups breadcrumbs
 
grated rind of 1 lemon
 
1/2-cup currants
 
1 tspn. Bi-carb.
 
1 cup tepid water
 
1/2-cup butter
 
1/2-cup sugar
 
1 cup flour
 
1 tspn, vanilla
 
3 tblspns, lemon juice
 
1/2-cup sultanas

Directions

Soak the sago in the tepid water and add about 3/4-cup warm milk.
Cream the butter and sugar; add syrup and Bi-carb.
Stir in the lemon juice, grated rind and flavouring.
Mix flour, breadcrumbs, cream of tartar and baking powder with a pinch of salt.
Mix with the butter mixture.
Lastly, add the washed and dried fruit, adding a little more milk, if necessary, to make a medium slack mixture in which the fruit will not sink.
Mix thoroughly and steam for 3 hours, in a greased mould.
Leave the mould, on removal from the sauce- pan, for a few minutes in a warm oven before unmoulding.
Serve with custard.
