Ingredients

 Margarine 1 tablespoon, soft
 Brown sugar 1/2 cup, firmly packed
 Whole egg1 , beaten
 Orange1/2 Teaspoon
 Cardamon1/2 Teaspoon
 Flour 1-3/4 cups, unsifted
 Baking powder2 Teaspoon
 Salt1/4 Teaspoon
 Milk1/2 Cup (16 tbs)
 Zucchini 1 cup diced in 1/4 inch cubes

Directions

Cream margarine and sugar; add egg and orange extract; beat well.
Mix together dry ingredients; add to creamed mixture alternately with milk.
Stir in zucchini.
Spoon into oiled custard cups or individual steam pudding molds.
Cover; steam 1 hour for large pudding, or 45 minutes for small ones.
