Steamed Zucchini Pudding Recipe
Ingredients
| Margarine 1 tablespoon, soft | ||
| Brown sugar 1/2 cup, firmly packed | ||
| Whole egg | 1 , beaten | |
| Orange | 1/2 Teaspoon | |
| Cardamon | 1/2 Teaspoon | |
| Flour 1-3/4 cups, unsifted | ||
| Baking powder | 2 Teaspoon | |
| Salt | 1/4 Teaspoon | |
| Milk | 1/2 Cup (16 tbs) | |
| Zucchini 1 cup diced in 1/4 inch cubes | ||
Directions
Cream margarine and sugar; add egg and orange extract; beat well.
Mix together dry ingredients; add to creamed mixture alternately with milk.
Stir in zucchini.
Spoon into oiled custard cups or individual steam pudding molds.
Cover; steam 1 hour for large pudding, or 45 minutes for small ones.
