Steamed Pork With Ground Rice Recipe

Ingredients
1 1/2 pounds fresh bacon enough water to cover pork
1 cup rice flour
4 slices ginger, finely chopped
1 stalk scallion, finely chopped
1/2 teaspoon salt
1/2 teaspoon sugar
4 teaspoons soy sauce
2 teaspoons sesame oil
1/2 cup water
2 large slices ginger
2 stalks scallion
Directions
Place the rice flour in a bowl and mix with chopped ginger, scallion, salt, sugar, soy sauce, oil and water; blend into a smooth paste.
Place the pork in a saucepan and cover with water.
Bring to a boil and cook for 40 minutes.
Remove the meat and cut into 1/2 inch slices vertically.
Coat each slice with the rice paste, and arrange in a bowl vertically, skin surface downward on the bottom of the bowl, so that it will be smooth when turned out.
Place the ginger and scallions on top of the meat.
Have a rack ready in a steaming pan and place the bowl on it.
Cover and steam for 2 1/2 hours.
When ready turn meat carefully onto a shallow bowl and serve immediately.
