Ingredients

 
Mussels - 10
 
Red Pepper - 1
 
Basil Leaves - 5
 
CurrySimple Red curry sauce - 1 pack

Directions

MAKING
1 In a pan or steamer, steam mussels in 1-2 cups of water for 5 minutes.
2 Meanwhile, cut the red pepper in half and remove the seeds.
3 On a serving plate, place the bottom of the red pepper.
4 In a pan, cook the top half of the pepper at medium-high heat for two minutes.
5 When the mussels have finished cooking, break off the top portion of the shell.
6 Arrange the mussel around the pepper.
7 Tear a piece of basil and place on top of each individual mussel.
8 When the red pepper has finished cooking, remove from the pan .
9 In the same pan, pour about 4 oz of red curry sauce.
10 Heat for about two minutes or until at serving temperature.
11 Chop 10 pieces off the cooked red pepper and place on the top of each mussel.
12 Pour the prepared curry sauce into the bottom half of the red pepper that is on the plate.

SERVING
13 Serve at once.
