10 Mussels
1 Red Pepper
5 Basil Leaves
1 pack CurrySimple Red curry sauce
Directions
Steam mussels in 1-2 cups of water for 5 minutes
While the mussels are cooking, cut the red pepper in half and clean out the seeds
Place the bottom portion of the red pepper on a serving plate
Cook the top half of the pepper at medium-high heat for two minutes
When the mussels have finished cooking, break off the top portion of the shell and place the mussel around the pepper
Tear a piece of basil and place on top of each individual mussel
When the red pepper has finished cooking, take out of pan and pour about 4 oz of red curry sauce in the pan. Heat for about two minutes or until at serving temperature.
Chop 10 pieces off of the red pepper and place on the top of each mussel
When the curry sauce is at serving temperature, pour into the bottom half of the red pepper that is on the plate.
Serve, Impress and Enjoy!
