Steamed Duck Recipe

Ingredients

 Duck1 5 pound
 2 pounds celery cabbage cut into 1 inch sections
 4 ounces sliced Smithfield ham
 Salt1 Teaspoon
 1 tablespoon lotus seeds
 Oil6 Tablespoon

Directions

Wash the duck well and pull off the hairs with a tweezer.
Cut off and discard the tail and oil sacs.
Mix half of the cabbage with the ham, salt and lotus seeds and stuff the duck with it.
Sew up the openings securely.
Heat a large pan with the oil.
When it is very hot, brown the duck in it for about 15 minutes.
Line the remainder of the cabbage in a large serving basin, and place the duck on top of the cabbage.
Have the water in the steamer boiling furiously, place the basin in it and cover with a tight lid.
Steam the duck for about 3 hours or until it is tender.
Serve very hot in the basin.
