Directions

MAKING
1) Over medium heat, bring 2 cups of water to a boil in the bottom of a steamer unit. Alternatively, a saucepan large enough to accommodate bamboo steamer or steamer insert can also be used.
2) In the meantime, place the rice in a bowl that will fit in a steamer or pan when the steamer or pan is covered. Add enough cold water to just about cover the rice and using hands, gently swish the rice around till the water starts to become cloudy. Pour off all the water very carefully and use fresh water to refill the bowl. Repeat the process till the water is clear.
3) Drain the rice and add just enough cold water to cover the rice by 1/2-inch. In the steamer or pan, place the bowl and cover it to cook the rice. Cook without disturbing for 30 minutes.
4) Remove the bowl of cooked rice very carefully from the pan or steamer and with a fork, fluff the rice. Return the bowl to the pan or steamer and remove from the heat. Cover the rice and keep it warm till it is time to serve.

SERVING
5) Serve hot.
