Steamed Salmon with Black Bean Sauce Recipe
Ingredients
| 2 salmon fillets, skin removed (about 4 ounces each) | ||
| Red bell pepper | 1 To taste | |
| Green bell pepper | 1 To taste | |
| Bamboo shoots | 2 Tablespoon, shredded | |
| Fermented black beans | 2 Teaspoon | |
| 12 matchstick-thin slivers fresh ginger | ||
| Scallion | 4 Teaspoon, shredded | |
| Soy sauce | 2 Tablespoon | |
| Chicken stock | 1 Tablespoon | |
| Pinch of freshly ground white pepper | ||
| Dash of vegetable oil | ||
| Dash of Oriental sesame oil | ||
Directions
GETTING READY
1) Trim the fillets into 4-inch squares if they are thicker than 1/2 to 5/8 inch
2) Remove the seeds and ribs of peppers after cutting off their tops and bottoms
3) Cut into 1/8-inch julienne rectangles
4) On an oiled steamer tray, place the salmon and cover it completely with the pepper
5) Sprinkle the fish with bamboo shoots, black beans, ginger and scallions
6) Stir soy sauce, chicken stock, white pepper, vegetable and sesame oil in a small bowl and pour this mixture over the fish
7) Steam cook the fillets in covered steamer for about 5 to 8 minutes.
SERVING
8) Transfer the fillets to a serving plate and serve immediately with sauce around it
