Ingredients
| 4 oz. boneless pork, with some marbling of fat, chopped not too finely | ||
| Water chestnuts | 1 Tablespoon, chopped | |
| Salt | To Taste | |
| Root ginger slice | 2 , chopped | |
| 1/2 tbsp. Chinese rice wine | ||
| Water | 1 Tablespoon | |
| 5 slices Szechwan preserved vegetables, cut 1/8 inch [3 mm.] thick | ||
Directions
Mix the pork with the water chestnuts, salt, ginger, wine and water.
Put the vegetable slices on top of the meat mixture.
Put the bowl in a bamboo steamer set in a wok or pan over boiling water, cover the steamer and cook for 30 minutes.
Alternatively, place the bowl on a trivet in a large saucepan with boiling water under the trivet and steam, covered, for 30 minutes.
