Steamed Pork With Salt Cabbage Recipe

Ingredients
3 tablespoons Chinese salt cabbage
1 teaspoon sugar
4 tablespoons raw leg of pork
Pinch each salt and Ve-Tsin
Low shakes pepper
1 teaspoon ginger sherry
Few drops sesame oil
1 chopped clove garlic
1 chopped thin slice fresh ginger
1 teaspoon soy sauce
1 good teaspoon pork dripping
1 teaspoon chopped spring onion
Directions
Well cover the cabbage with cold water.
Bring to the boil and boil for 2-3 minutes.
Drain, rinse in cold water, drain again and squeeze out moisture.
Add the sugar and work it well in.
Cut the pork into very thin slices.
Put them into a basin and add the seasonings, sherry, sesame oil, garlic, ginger and soy sauce.
Mix all well together and finally add and work in the pork dripping.
Place the mixture on an oiled plate, cover with greaseproof paper and steam for 8 minutes.
Cut into slices and sprinkle with the onion which should include both the white and green.
