Steamed Mussels Recipe

4 pounds mussels
 
8 cups water
 
2 large leeks, chopped
 
1 large onion, chopped
 
4 stalks celery with leaves, chopped
 
1/4 teaspoon thyme
 
1 bay leaf

Directions

Scrub the mussels well, and using kitchen shears, cut off the "beards." Place the mussels in a large pot with all of the remaining ingredients.
Bring to a boil over high heat, then reduce heat to medium and cook until all of the mussels are open, about 10 minutes.
Discard the bay leaf and any of the mussels that do not open.
