Ingredients

| 3 thin slices fresh ginger | ||
| 1 soaked Chinese mushroom | ||
| Onion spring | 1 | |
| 2 tablespoons shredded Szechwan cabbage | ||
| 1 dessertspoon shredded cooked lean pork | ||
| Pepper | 1 Teaspoon (Leveled) | |
| Pinch each sugar and salt | ||
| Good pinch Ve-Tsin | ||
| Sesame oil | 1 Teaspoon | |
| Soy sauce | 1 Tablespoon | |
| Cornflour | 1 Teaspoon | |
| Water | 1 Tablespoon | |
| 1 onion 'flower' | ||
Directions
Place the trimmed halibut ready on a plate.
Cut the ginger and mushroom (stem discarded) into thin strips.
Cut on the slant the spring onion into 3/4-inch pieces.
Add the cabbage, pork and seasonings, then the oil, soy sauce and cornflour, blended with the water.
Mix well together.
Heap on to the halibut slices and steam for 10-15 minutes.
Transfer carefully to a heated serving dish.
Remove skin and bones.
If necessary, rearrange the vegetables.
Garnish with the onion 'flower'.
