Sauce For Steamed Fish Recipe
Ingredients
1 tablespoon butter
1 shallot, finely chopped
1/2 cup fish stock
1/2 cup dry white wine
2 tablespoons heavy cream
8 tablespoons butter, softened
Salt and fresh pepper to taste
Juice of 1/2 lemon
2 tablespoons finely chopped parsley
Directions
Heat butter in small saucepan and add shallots.
Cook 1 minute, add fish stock, and reduce until 3 tablespoons remain.
Add wine and reduce by half.
Add cream.
Heat.
Beat in butter, 1 tablespoon at a time.
Add salt and pepper, lemon juice, and parsley.
Reheat any remaining vegetables.
Transfer to serving dish.
Lay steamed filets on top.
Top with a small amount of sauce.
