Steamed Date Pudding Recipe
Ingredients
| 1/3 cup butter or margarine, room temperature | ||
| Light brown sugar | 1 Cup (16 tbs), lightly packed | |
| Eggs | 2 | |
| Unsweetened cocoa powder | 2 Tablespoon | |
| Baking soda | 1 Teaspoon | |
| Flour | 1/2 Cup (16 tbs) | |
| Water | 1 Cup (16 tbs) | |
| Semi-sweet chocolate package | 1 | |
| Pitted dates | 1 Cup (16 tbs), finely chopped | |
| Walnuts | 1/2 Cup (16 tbs), chopped | |
| Orange peel | 1 Teaspoon | |
Directions
Grease and flour a 1-1/2 quart mold; set aside.
In a large mixer bowl, cream butter or margarine and brown sugar.
Beat in eggs, then cocoa and baking soda.
Add flour alternately with water, beating after each addition.
With a spoon, stir in chocolate pieces, dates, walnuts and orange peel.
Pour into prepared mold.
Cover with aluminum foil and press overhanging foil edges against outside of mold.
Loop a large rubber band over foil and around top of mold to seal, or tie foil securely with string.
Place mold on a rack in a large kettle.
Pour enough boiling water in kettle to reach halfway up the mold.
Cover kettle.
Simmer about 2 hours or until skewer inserted in pudding comes out clean.
Remove mold from kettle.
Let stand 15 minutes.
Loosen edges with a knife and invert on a serving platter.
Serve warm.
