Steamed Christmas Fig Pudding Recipe

Ingredients

 Chopped3/4 Pound, dried
 1 1/2 c. botded milk or 3/4 c. evaporated milk and 3/4 c. water
 1 1/3 c, suet, ground fine
 Soft bread crumbs1 1/2 Cup (16 tbs)
 3 eggs, well-beaten
 All purpose flour1 1/2 Cup (16 tbs)
 Baking powder2 1/4 Teaspoon
 Granulated Sugar1 Cup (16 tbs)
 Nutmeg1 Teaspoon
 Salt3/4 Teaspoon
 3 tablesp. grated orange rind

Directions

Cook the figs with the milk in a double boiler for 20 min.
Combine the suet, bread crumbs, and eggs.
Add the cooked fig mixture with the sifted dry ingredients and the orange rind, and mix well.
Pour into a 2 qt greased or oiled, covered pudding mold.
Steam on top of the range for 2 hrs as in.
General Directions Serve with Hard Sauce, Ice Cream Sauce, or Vanilla Sauce.
