Ingredients

 
2 lbs. skinned, boned chicken
 
Marinade:
 
1 tablespoon rice wine or dry sherry
 
3 slices fresh ginger root
 
4 green onions, chopped in 2-inch pieces
 
1/2 teaspoon salt
 
About 8 cups boiling water
 
Seasoning sauce:
 
1 cup juice from steamed chicken
 
1 tablespoon rice wine or dry sherry
 
4-1/2 teaspoons minced fresh ginger root
 
4 teaspoons minced garlic
 
1/2 cup chopped green onions
 
3 tablespoons soy sauce
 
1/2 teaspoon sugar
 
2 teaspoons sesame oil

Directions

Rinse chicken with cold water and drain well.
Combine marinade ingredients in a large bowl.
Add chicken; mix well.
Let stand 20 minutes.
Pour 4 cups boiling water into a wok or large pot.
Place chicken in a baking dish in steamer or on steamer rack over boiling water.
Cover wok and steam over high heat 45 minutes to 1 hour until meat is very tender, adding more boiling water as needed.
Remove wok from heat.
Let cool slightly before removing chicken; reserve juice in baking dish for seasoning sauce.
Use a sharp cleaver or boning knife to chop chicken into 2-inch square pieces.
Place on a platter.
Combine ingredients for seasoning sauce in a small bowl and pour over chicken.
