Large, fat white or green asparagus spears - 1 3/4-2 lb
 
For the mousseline sauce:
 
Hollandaise sauce - 1 3/4 cups
 
Whipping cream - 1/2 cup
 
Garnish with:
 
Tomato rosebuds
 
Sprigs of parsley or basil

Directions

GETTING READY
1 Trim and wash the asparagus.

MAKING
2 In a steamer, place the asparagus.
3 Sprinkle with very little salt.
4 Steam for about 12 minutes or until tender.
5 For the dressing, in a bowl, beat the cream until stiff.
6 Gradually fold into the hollandaise sauce.
