Ingredients
2 chickens, 1 kg. each (4 tbsps. dry sherry or cooking wine, 4 tbsps. soya sauce, 2 tsps. five spice powder 2 tsps. salt, 1/2 tsp. black pepper ground) mix together
4 tbsps. cornflour
1/2 cup fresh coriander leaves finely chopped
2 cups peanut oil for frying
1 cup nanking sauce
Directions
Wash the chickens well and dry the inside and out with paper towels.
Rub the chickens well with seasoning mixture and let it marinate for 1-2 hours.
Steam the chickens for 1 1/2 hours.
Remove and dredge with cornflour.
Heat oil in a large pan.
When the oil becomes very hot, gently lower the chicken (fry one at a time) into the oil.
Keep ladling hot oil over the top of the chicken, if chicken is not immersed.
Turn it when underside is done and fry otherside in the same manner, until skin is crisp.
Drain well and allow it to cool a little.
Fry the other chicken in the same way.
Cut the chicken into bite size pieces.
Place them on a serving plate and garnish with chopped coriander.
Serve with Nanking sauce.
