Steaks Melba Recipe
Ingredients
| Tomatoes | 4 Medium | |
| Cheese | 1/2 Cup (16 tbs), grated | |
| 4 strip or boneless loin steaks | ||
| Oil | 5 Tablespoon | |
| Salt | 1 Teaspoon | |
| Black pepper | 1/2 Teaspoon | |
| Port | 5 Tablespoon | |
| Lettuce leaves | ||
Directions
Cut the tomatoes in half, hollow out and fill with the grated cheese.
Brown under the broiler.
Fry the steaks in the heated oil for 3 minutes on each side, lowering the heat after 1 minute.
Season with salt and pepper and keep warm.
Stir the port into the frying pan, scraping up all the sediment.
Bring to the boil and pour into a sauceboat.
Arrange the steaks on a serving dish and garnish with lettuce leaves and the tomatoes.
Serve the sauce separately.
