Steak Tartar With Brandy Recipe

Ingredients
1/2 pound fresh beef, cut into 1 inch cubes
1 teaspoon Worcestershire sauce
2 teaspoons cognac
1 egg yolk
Dash Tabasco sauce
1/2 teaspoon paprika
Salt and pepper to taste
Garnishes
Olives
Cocktail onions
Anchovy fillets with capers
Sliced gherkins
Onion, chopped finely with the metal blade
Crackers or thin slices of dark rye or pumpernickel snack bread
Directions
Place beef, Worcestershire sauce, cognac, egg yolk, Tabasco sauce, and paprika in processor bowl.
Process with metal blade until beef is finely chopped.
Place mixture in a bowl set in cracked ice.
Place garnishes in small bowls.
Guests spread meat on crackers or bread and top with a garnish.
