Steak Tartare Recipe
Ingredients
| 2 lb ground beef round | ||
| Onion | 1/2 Cup (16 tbs), finley chopped | |
| Capers | 1/2 Cup (16 tbs), drained | |
| 8 anchovy fillets, finely chopped | ||
| Egg yolks | 4 | |
| Salt | 1 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| Watercress | 1/4 Cup (16 tbs), finely chopped | |
| Unsalted saltine crackers or small rounds of | ||
| Rye bread | ||
Directions
In large bowl and using 2 forks, lightly toss all ingredients, except the crackers, until they are well combined.
Mound on a serving platter.
Refrigerate, covered, until ready to serve—2 to 3 hours.
Surround with the crackers or rye bread.
Makes 20 servings.
To make more decorative: Turn meat mixture into
a fancy mold. To serve: Unmold, and garnish with
anchovy strips and capers.
