Directions

Sprinkle 1 side of meat with plenty of flour, 1/2 teaspoon salt, 1/2 teaspoon pepper and l/2 teaspoon monosodium glutamate.
Scatter 1 finely cut garlic clove over it.
Pound seasonings into steak, flattening it slightly.
Turn steak; add flour and remaining seasonings.
Pound side.
Meltbutterin heavy skillet; add meat and onions.
Brown meat on both sides; add wine.
Cover skillet tightly; lower heat and simmer 2 hours.
May bake in 325-degree oven for 2 hours.
If necessary to add liquid, use half beef broth and half wine.
