Directions

MAKING
1. For the Steak Diane: Melt butter in a pan.
2. Add Filet Mignon and cook over low heat. Remove Filet after 5 minutes.
3. In the same pan, the Dijon mustard, worcestershire sauce and shallots and stir.
4. Increase flame and add sherry and cook out alcohol from the sauce.
5. Add the juice from the meat and the filet back into the pan.
6. Next, in a spoon add the cognac and flame up to cook out the alcohol.
7. Add the cognac to the sauce and blend while the flame is still on. Remove from flame and plate.
8. For the Caesar Salad: In a bowl, add garlic, anchovy paste, dijon mustard and mix in circles.
9. Next, add the Worcestershir sauce and Tobasco sauce and continue mixing.
10. Next, add lemon juice and mix.
11. Next, add pasteurized egg and olive oil and continue mixing.
12. Add the lettuce and parmesan cheese and mix well and plate.
13. For the Banana Foster: Melt a tablespoon of butter in a pan.
14. Add lemon and orange zest.
15. Add lemon juice and orany juicce.
16. Add brown sugar and banana liqueur.
17. Add banana and brown lightly.
18. Add spiced rum and mix.
19. Sprinkle with cinnamon while managing the flame.

SERVING
20. Plate the Steak Diane with steamed vegetables and serve as main course.
21. Plate the Caesar salad and serve as an appetizer.
22. Plate the banana foster with vanilla ice cream or jelly and serve ad dessert.
