Steak And Kidney Pie Recipe
Over the years I have mastered the art of making Steak And Kidney Pie which I was taught by my family elders. European folks out there will love this recipe. Ingredients
1 lb stewing steak
2 lamb's kidneys
2 tablespoons flour
1 teaspoon salt
Freshly ground black pepper
2 tablespoons dripping
1/2 cup water
2 tablespoons chopped parsley
12 oz Flaky Pastry or 12 oz commercial puff pastry
Directions
Trim steak and cut into 1/2-inch cubes.
Wash and skin kidneys, halve and remove cores.
Cut kidney into small pieces.
Coat meat and kidney with seasoned flour.
Melt dripping in a heavy saucepan over a moderate heat and brown the steak and kidney, stirring continuously.
Add water, cover tightly and simmer gently for 1 hour.
Stir in parsley, leave to cool.
Roll out pastry 1-inch larger than top of pie dish.
Cut a strip 1/2-inch wide from edge, place on dampened rim of dish, brush with cold water.
Spoon steak and kidney into dish.
Place remaining pastry over, press edges to seal.
Trim off excess pastry and decorate edge by flaking and fluting with back of a knife.
Glaze pie with beaten egg and cut a hole in top.
