Directions
Season roast with salt and pepper.
Place roast, fat side up, in open shallow roasting pan.
Insert meat thermometer so the bulb reaches the center of the largest muscle, being sure that the bulb does not rest in fat or on bone.
(Do not add water; do not cover.) Roast at 325°F to desired degree of doneness.
Allow about 1 to 2 servings per pound.
