MAKING
1) Using a good sharp knife, separate the bone from the meat to create a flap
2) Fasten the meat with string
3) Make slits into the meat and insert the cloves of garlic into each slit
4) Rub the meat with the seasoning mix all over the roast
5) Rib side down, place the meat into a tray over the grill
6) Into the same tray add the carrots, celery and onion
7) Pour in the beef stock just a little to coat the base of the pan and get the vegetables steamed
8) Once the roast is done, take it off the heat
9) Place the roast onto a sheet of aluminum foil and sit for about 20 minutes
10) In the tray with the veggies, add a dab of butter and some more beef stock and lightly heat the mixture
11) Slice the roast
SERVING
12) Serve beef slices with the veggies
