Stale Bread Soup Recipe
Ingredients
| Olive oil | 2 Tablespoon | |
| 1 onion, chopped fine | ||
| Garlic | 6 Clove (5gm), chopped | |
| 2 lbs/1 kg ripe tomatoes, or 1 can tomatoes | ||
| Black pepper | 1 Teaspoon | |
| Salt | To Taste | |
| Hot water | 5 Cup (16 tbs) | |
| 2 Tbsps fresh basil or 1 tsp dried basil or 1 tsp dried thyme | ||
| 2 thick slices stale bread torn into pieces | ||
| 1 bunch green onions or a handful of fresh basil leaves | ||
Directions
MAKING
1)In a saucepan, heat oil.
2) Add onion, pepper and garlic and saute for a minute.
3) Add tomatoes and cook further for atleast 5 minutes.
4)Stir in the bread, salt and water, and simmer for atleast 10 -15 minutes, stirring occasionally.
SERVING
5)Serve soup hot garnished with thinly sliced green onions or chopped fresh basil.
