St. Patrick's Day Mint Mold Recipe
The St. patrick's day mint mold is a fresh and light pineapple and mint mold. Made with sour cream and and gelatin, the st. patrick's day mint mold is garnished with mint leaves and can be served at the end of the meal or even between the courses.
Ingredients
| Unflavored gelatin | 2 Tablespoon | |
| Cold water | 1/2 Cup (16 tbs) | |
| Pineapple juice | 2 1/2 Cup (16 tbs) | |
| 3/4 cup mint jelly | ||
| 3 drops mint flavoring | ||
| Green food coloring | 3 Drop | |
| Sour cream | 1 Cup (16 tbs) | |
| 1 1 lb 4 oz can crushed pineapple, drained | ||
Directions
Soak gelatin in cold water.
Heat pineapple juice and add gelatin; stir until dissolved.
Add mint jelly and dissolve.
Remove from stove and cool until pineapple gelatin thickens.
Beat in mint flavoring and green food coloring.
Fold in sour cream and pineapple.
Blend well, and pour into clover leaf mold.
Chill until firm.
Garnish with mint leaves.
