St. Nick Salad Ring Recipe
St. Nick Salad Ring is a truly delicious treat and makes the right pick adding to the party menu. I tried this St. Nick Salad Ring last week and believe when I say that I had an endless list of applauses coming my way. Give this St. Nick Salad Ring a try.
Ingredients
| 2 pkg. strawberry gelatin | ||
| Boiling water | 3 1/2 Cup (16 tbs) | |
| Lemon juice | 2 Tablespoon | |
| Vinegar | 1 Tablespoon | |
| Onion | 1 Tablespoon, grated | |
| Salt | 1 Teaspoon | |
| 2 3 oz. pkg. cream cheese | ||
| Parsley | 1/3 Cup (16 tbs), chopped | |
| 2 grapefruit, sectioned | ||
| Celery | 1 Cup (16 tbs), diced | |
| Avocado | 1 , diced | |
| 1 med. unpared apple, diced | ||
Directions
Dissolve gelatin in boiling water; stir in lemon juice, vinegar, onion and salt.
Chill until syrupy.
Form cream cheese into small balls about the size of marbles; roll in parsley.
Lightly oil 1 1/2 quart ring mold.
Alter nate cheese balls and grapefruit sections around bottom of mold, rounded side of fruit down.
Spoon syrupy gelatin around design to depth of about 1/4 inch.
Chill until firm.
Fold celery, avocado and apple into remain ing syrupy gelatin.
Pour into mold.
Chill for several hours.
