Ingredients
2-3 cups flour
1/2 tablespoon active dry yeast
1 teaspoon honey
2/3 cup hot water (120°-130°F)
1/2 teaspoon salt
2 tablespoons unsalted butter
3 tablespoons aniseeds
1/3 cup golden raisins cornmeal
Directions
1 Combine 1 1/2 cups flour, yeast, honey, hot water, salt, butter, and aniseeds in a large bowl. Mix thoroughly. Add raisins.
2 Add enough remaining flour to make a soft dough.
3 Knead on lightly floured surface until smooth€”about 10 minutes.
4 Place in greased bowl, turning to coat top. Cover; let rise in warm place until double€”about 1 hour.
5 Punch down dough. Shape into long loaf. (Tradition says you should point the bread to look like a patriarch's beard.) Grease baking sheet, and sprinkle with cornmeal. Place loaf on baking sheet. Cut loaf 3 or 4 times diagonally 1/2 inch deep.
6 Cover; let rise in warm place€”about 30 minutes.
7 Spray with water. Bake in a preheated 350°F oven 30 minutes or until done. Spray 3 or 4 times during baking.
8 Cool on wire rack.
