Sri Lankan Salad Recipe
Ingredients
| 6 large firm tomatoes | ||
| Lime juice | 2 Tablespoon | |
| Salt | To Taste | |
| Shallots | 3 , finely chopped | |
| Green pepper | 1/2 To taste, finely chopped | |
| 1 hot chili pepper, seeded and finely chopped | ||
| Coconut cream | 1/4 Cup (16 tbs) | |
| Bombay duck | 2 Tablespoon, crumbled | |
Directions
Immerse tomatoes for a few seconds in boiling water.
Place under cold running water, then remove skins. (They should slip off easily.) Cut tomatoes in half.
Remove and discard seeds.
Chop tomatoes into small pieces and place in a salad bowl.
Add lime juice, salt, shallots, green pepper and chili.
Pour coconut cream over vegetables.
Toss well.
Just before serving, sprinkle with Bombay duck.
