Squirrel With Rice Recipe

| Squirrels | 2 , cut up | |
| Water | 2 Quart | |
| Rice | 1 Cup (16 tbs) | |
| Catsup | 1⁄4 Cup (4 tbs) | |
| Onion | 1⁄2 , sliced |
Directions
Dice salt pork; saute in large saucepan until brown.
Add squirrel pieces; brown lightly.
Add 2 quarts water; simmer until squirrels are tender, adding addi- tional water if needed.
Add rice, catsup, onion and seasonings.
Cook over low heat, stirring frequently, until rice is tender.
