Squid Athenian Style Recipe
The Athenian style squid is a European squid recipe. Prepared with garlic and herbs like parsley and oregano, the athenian style squid is cooked with white wine. Flavored with added tomatoes and onions, the athenian style squid can be served with spaghetti or pasta.
Ingredients
3 pounds frozen squid
1 cup chopped onions
1 clove garlic, chopped
3 tablespoons olive oil
2 1/2 cups chopped canned tomatoes
1/2 cup chopped fresh parsley
1/2 teaspoon salt
1/4 teaspoon pepper
3/4 teaspoon crumbled dried oregano
1/4 cup white wine
Directions
Thaw squid; remove tentacles.
Chop; reserve.
Remove and discard head, chitinous pen, and viscera.
Wash mantle well; cut into pieces.
Saute onions and garlic in oil until lightly browned.
Add tomatoes, parsley, salt, pepper, oregano, wine, and squid.
Cover; simmer 1 hour, until squid is tender.
